Sensors and Remote Monitoring: What Is Real

Temperature monitoring genuinely pays for itself. Most of the rest of the connected-equipment story is ahead of what restaurant equipment actually supports.

Vendors describe a future in which equipment reports its own condition. One part of that is here, affordable and worth buying. The rest is not yet.

Temperature monitoring

The clear case. Wireless sensors in refrigeration units reporting continuously, with alerts on excursion.

What it delivers:

Alerts before staff notice. Particularly overnight and at weekends, which is when refrigeration fails and nobody is looking.

A complete compliance record, automatic and timestamped, which satisfies food safety documentation and removes the manual log.

Trend data. The unit drifting warm over days, recovering more slowly, running longer. This converts an emergency into a scheduled repair, which is the entire economic argument.

Door-open alerts, which prevent one of the most common and most expensive avoidable failures.

The cost has fallen substantially. For most operators the product-loss avoidance alone justifies it on the walk-ins, before counting the compliance and maintenance value.

Where to start: walk-in cooler and freezer at every site. Reach-ins second.

Getting the alerts right

The most common failure is alert fatigue.

Set thresholds and durations, not just thresholds. A cooler that reads warm for ninety seconds during a delivery is not an alert. One that reads warm for thirty minutes is.

Different rules for different times. Overnight excursion is more urgent than one during a service period.

Route them to someone who can act. An alert to a general email address at 2am accomplishes nothing.

Escalate if unacknowledged.

Review muted alerts monthly. A muted alert system is worse than none, because it creates confidence without coverage.

What else has a real signal

Door sensors on walk-ins. Cheap, and the failure they prevent is expensive.

Water leak detection in plant areas and under equipment. Inexpensive and it catches a class of failure that causes disproportionate damage.

Energy monitoring at circuit level. Genuinely informative — a refrigeration circuit consuming more over weeks indicates degradation. Requires installation and is worth it at scale.

Run-time monitoring where equipment supports it, which most restaurant equipment does not.

What is oversold

Predictive failure analytics on restaurant equipment. Most of it has no sensors capable of supporting prediction. Vendors marketing predictive maintenance for a fryer are describing a schedule.

Vibration analysis. Genuine industrial technique, not matched to this equipment or these budgets.

Connected equipment as a category. Manufacturers increasingly ship equipment with connectivity, and the data available is frequently limited to what the manufacturer's own platform shows, in their format, with no export.

Ask what data you actually get and whether you can get it out. "Connected" frequently means connected to the manufacturer.

Whole-site intelligence platforms aggregating everything into a dashboard. Impressive demonstrations, thin underlying signal, substantial cost.

The practical position

Buy temperature monitoring for refrigeration. This is not marginal; it pays.

Buy door sensors on walk-ins.

Consider leak detection in plant areas.

Consider circuit-level energy monitoring at scale.

Be sceptical of everything else until someone can tell you which sensor produces which signal and what decision it changes.

What monitoring does not replace

Physical inspection. A sensor reports temperature; it does not see a fouled condenser, a damaged panel, a worn gasket or a corroded connection.

The preventive schedule. Monitoring tells you something is wrong sooner. Maintenance stops it going wrong.

Judgement. An alert is a prompt to look, not a diagnosis.

Operators who install monitoring and reduce preventive visits have swapped prevention for faster detection, which is a worse trade than it appears: they will now find out promptly about failures they were previously preventing.

A first deployment

Concretely, for an operator with no monitoring.

Start with walk-ins. Cooler and freezer at every site. This is where the product value is concentrated.

One sensor per unit, positioned where the product is rather than next to the evaporator, because that is the temperature that matters.

Add a door sensor on each.

Set the alert rules before going live: threshold, duration, and different rules for trading hours and overnight.

Route to named people with escalation if unacknowledged.

Run for a month before trusting it, and expect to adjust the thresholds. The first month always produces more alerts than expected.

Then decide whether to extend to reach-ins, which are cheaper individually and numerous.

Keep the manual log for a period in parallel, until the automatic record is demonstrably reliable and accepted by whoever audits your food safety documentation.
