Ranges, Griddles and Ovens

Durable equipment with unglamorous failures. Most problems are cleaning, calibration and ventilation rather than component failure.

Cooking equipment is durable, and most service calls on it are avoidable. The three recurring causes are grease, miscalibration and inadequate airflow.

Gas equipment

Burners foul. Grease and debris block ports, producing uneven flame, yellow flame and reduced output. Cleaning is a routine task that is frequently omitted.

Pilot lights and ignition systems fail. Modern equipment uses electronic ignition, which fails differently from standing pilots and needs a technician.

Gas pressure affects performance across the whole line. A pressure problem presents as several appliances underperforming, which is diagnostic.

Flexible connectors have a life and are a safety item. They should be inspected, and they must be replaced rather than repaired.

Anything involving gas requires a licensed technician in most jurisdictions. This is not a place for internal staff regardless of competence, because the liability and the insurance position both turn on it.

A gas smell is an emergency. Evacuate, shut off at the main, call the utility. Not a work order.

Electric equipment

Elements fail, usually gradually. Uneven heating across a griddle or in an oven is the early sign.

Contactors and relays are common failure points on high-load equipment.

Thermostat drift is universal and it changes food output before anyone attributes it to the equipment.

Electrical connections loosen under thermal cycling. This causes heat, arcing and eventually failure, and it is what a technician is checking when they open a panel during a preventive visit.

Ovens specifically

Door seals and hinges. A door that does not seal costs energy and produces uneven results. Very common, very cheap to fix, and it presents as "the oven is not cooking evenly".

Calibration. Ovens drift. An oven running 25 degrees off produces consistent complaints about food that nobody connects to the equipment. Verify against an independent thermometer periodically.

Fans, in convection ovens. A failed or failing fan produces uneven cooking.

Steam systems, in combi ovens. Scale is the enemy, exactly as with ice machines, and water treatment is required rather than optional. Combi ovens are the most maintenance-sensitive item on many lines and the most expensive to neglect.

Racks and interiors. Cleaning affects performance and is a food safety item.

Griddles and flat tops

Surface condition. Warping from thermal shock — cold water on a hot surface — is permanent and it ruins cooking consistency.

Thermostat zones. Multi-zone griddles drift independently and produce hot and cold areas.

Grease management. Drawers, troughs and drains block. This is both a fire risk and the source of most griddle-adjacent complaints.

The ventilation connection

Cooking equipment performance depends on the hood system working.

Insufficient exhaust produces heat build-up, poor combustion in gas equipment, and an unbearable kitchen.

Insufficient make-up air is the more common and less understood problem. If air is extracted without replacement, the kitchen goes into negative pressure. Gas appliances then struggle to draw, doors become hard to open, and combustion can be affected.

Recurring problems across several appliances frequently indicate a ventilation or gas supply issue rather than a series of equipment faults. This is worth checking before replacing anything.

Preventive tasks

Semi-annual, by a technician:

Clean and inspect burners. Check and adjust gas pressure. Test ignition systems. Inspect flexible connectors. Verify thermostat calibration on every unit. Check electrical connections. Inspect door seals and hinges. Test safety devices.

Daily and weekly, by kitchen staff:

Cleaning, including under and behind equipment. Grease removal. Checking that nothing is blocking air intakes.

The cleaning point that matters

Cleaning under and behind the cooking line is a maintenance task disguised as a cleaning task.

Grease accumulation there is a fire risk, it attracts pests, it is an inspection finding, and it causes equipment failures by blocking ventilation and fouling components.

It is also the task most likely to be skipped because it requires moving equipment. Building it into a scheduled deep clean, with equipment moved, is worth the disruption.

Thermostat verification

Calibration drift is the most common cause of complaints that are never attributed to equipment.

Check with an independent calibrated thermometer, not the appliance display.

Ovens: at setpoint, in the centre, after a full preheat and a settling period. Then at two other points to check evenness.

Fryers: at setpoint, in the oil, away from the element.

Griddles: at several points across the surface, because zones drift independently.

Holding equipment: at the point where food sits, which is not where the sensor is.

Record the readings. A drift of a few degrees is tolerable; a consistent deviation is a service item and a food safety one for holding equipment.

Do this quarterly and after any control repair. It takes twenty minutes for a whole line and it resolves a category of complaint that otherwise persists indefinitely.
