High heat, hot oil and a heavy gas or electrical load. Maintenance is largely oil management, and the safety exposure is the kitchen's highest.

Fryers are the most hazardous equipment in most restaurant kitchens and among the most demanding to maintain. Oil quality drives both food quality and equipment life.
The failure points
Heating elements or burners. Electric elements fail; gas burners foul and their orifices block. Uneven heating is the early symptom.
Thermostats and controls. Drift produces oil that is too hot or too cool. Too hot degrades oil rapidly and creates a fire risk; too cool produces poor food and increased oil absorption.
High-limit safety cut-outs. These prevent oil reaching ignition temperature. They fail, and a fryer whose high-limit does not function is a fire waiting to happen. This is a test item on every preventive visit.
Drain valves, which seize or leak.
Filtration systems, where fitted — pumps, filters, seals.
Tank integrity. Old fryers develop leaks at welds and fittings. A leaking fryer is removed from service, not scheduled.
Gas connections and flexible hoses.
Oil management as maintenance
Oil is a consumable and its condition affects the equipment.
Degraded oil polymerises onto tank surfaces and elements, insulating them and forcing higher temperatures. This shortens element life and reduces efficiency.
Filtration removes particles that accelerate degradation. Daily filtration where fitted is both a food quality and an equipment life measure.
Boil-outs at the manufacturer-specified interval remove polymerised residue. Skipping them is the most common cause of premature element failure.
Oil temperature control matters. Running hotter than necessary degrades oil faster and stresses the equipment.
Correct oil level — low oil exposes elements, which is both a fire risk and a fast route to element failure.
The safety exposure
Hot oil is the leading cause of burn injuries in commercial kitchens, and the leading cause of kitchen fires alongside grease build-up in hoods.
Never move a fryer with hot oil. Every operator knows this; it happens anyway. Oil must be cooled and drained.
Filtering hot oil requires equipment designed for it and staff trained on it.
The high-limit control is a safety device, not a convenience. If it has been bypassed — and it happens, when it nuisance-trips — the fryer should be out of service until it is repaired.
Fire suppression coverage. Fryers must be under a nozzle of the hood suppression system, correctly positioned. Moving a fryer or replacing it with a different model can put it outside coverage, which is a serious and easily missed compliance failure. Any fryer change requires the suppression system to be reviewed.
Preventive tasks
Quarterly or semi-annual, by a technician:
Test the thermostat against a calibrated thermometer. Test the high-limit cut-out. Inspect and clean burners or elements. Check gas connections and hoses. Inspect the drain valve. Service the filtration system. Check the tank for leaks. Verify suppression nozzle alignment.
Daily and weekly, by kitchen staff:
Filter oil. Check level. Clean the exterior and the surrounding area, because grease accumulation around a fryer is a fire risk. Boil out on schedule.
Diagnosing the common complaints
"Food is greasy." Oil temperature too low, oil degraded, or the fryer overloaded. Check the thermostat calibration first.
"It takes too long to recover." Undersized for the load, element or burner fouled, or thermostat drift.
"Oil goes off quickly." Temperature too high, inadequate filtration, contamination from a previous product, or a fryer being run when not in use.
"It trips out." High-limit operating, which means a control fault or genuine overheating. Do not reset repeatedly — find the cause.
Replacement considerations
Fryers have a finite life and old ones become inefficient and unsafe.
A tank leak is terminal.
Repeated control failures on an old unit are not worth chasing.
Efficiency has improved substantially in newer models, and the energy and oil savings are measurable.
When replacing, check the suppression coverage and check that the replacement fits the hood, the gas supply and the electrical capacity. A new fryer that does not fit the existing suppression geometry creates a compliance problem on day one.
What to check after any fryer change
Replacing or moving a fryer creates compliance exposure that is invisible unless someone checks deliberately.
Suppression nozzle coverage. Nozzles are positioned for a specific appliance at a specific location. A different width, height or position may leave the appliance unprotected. This requires the suppression contractor, not a judgement from the kitchen.
Hood capture. A taller or differently configured appliance may sit outside the capture area.
Gas supply capacity, if the new unit has a different input rating.
Electrical capacity and circuit protection.
Clearance to combustibles, which is a code requirement and frequently reduced when equipment is squeezed in.
Ventilation balance, if the total appliance load changed.
Build a rule into the process: no cooking appliance is installed, moved or replaced without a suppression review booked. This is a single line in the procurement checklist and it prevents the most serious avoidable compliance failure in a restaurant kitchen.
