Gas and Electrical Safety
The areas with least discretion and the largest consequences. What must be done by licensed people, and what staff must never touch.

Gas and electrical work carry licensing requirements, insurance implications and the potential for catastrophic outcomes. This is the section with the least room for pragmatism.
Gas
Only licensed contractors. Installation, repair, modification and testing of gas equipment and pipework require appropriate licensing in essentially every jurisdiction. Internal staff, however competent, are not a substitute.
Flexible connectors on movable equipment have a service life and are a defined failure point. They must be inspected, and replaced rather than repaired. Equipment moved repeatedly for cleaning stresses them.
Restraint devices on movable gas appliances prevent the connector being stretched. They exist, they get disconnected, and nobody notices.
Gas pressure and combustion affect performance across the whole line. A regulator fault presents as several appliances underperforming.
Ventilation is part of gas safety. Insufficient make-up air affects combustion and can produce carbon monoxide. This is the mechanism by which an air balance problem becomes a life safety problem.
Carbon monoxide detection is required in many jurisdictions where gas appliances operate and is worth having regardless.
A gas smell is an emergency, not a work order. Evacuate, avoid electrical switches, shut off at the main if it is safe and accessible, call the utility's emergency line. Site staff should know this without needing to look it up.
Electrical
Licensed contractors for anything beyond resetting a breaker.
Restaurant electrical loads are heavy and thermally cycled, which loosens connections. Loose connections heat, arc and eventually fail or ignite. This is what a technician is checking when they open a panel, and it is a genuine fire cause.
Repeated breaker trips are a fault, not a nuisance. Resetting repeatedly is how a developing problem becomes a fire. A circuit that trips twice needs a contractor.
Water and electricity coexist badly in kitchens. Ground fault protection where required, and any water ingress near electrical equipment is a P1.
Extension leads and adaptors as permanent arrangements are both a fire risk and a common inspection finding. They indicate insufficient circuits, which is an installation problem.
Equipment earthing and bonding, particularly on items that are moved.
Panel access must be kept clear. Storage in front of electrical panels is a code violation everywhere and it is universal in restaurant back rooms.
Periodic inspection
Requirements vary by jurisdiction. Many require periodic inspection of fixed electrical installations at defined intervals, with a certificate.
Insurers frequently require it regardless of the legal position, and will ask after a fire.
Thermal imaging of panels is a low-cost inspection that finds loose and overheating connections before they fail. Worth adding to an annual programme for larger sites.
Portable appliance testing is required in some jurisdictions and is good practice in others.
What site staff may do
A short list, and everything else is a contractor.
Reset a tripped breaker once, and report if it trips again. Report anything hot, smelling, sparking or discoloured. Report water near electrical equipment. Keep panels clear. Report damaged leads and plugs, and remove the equipment from service.
They may not: open panels, replace fuses inside equipment, bypass safety devices, repair leads, or work on anything gas.
The insurance dimension
Unlicensed work voids coverage. An operator who has an internal person do gas or electrical work has a policy that may not respond.
Records matter after an incident. Insurers ask for inspection certificates, maintenance records and contractor credentials. Their absence complicates a claim at the worst moment.
Keep the certificates filed by site with everything else: gas safety records, electrical inspection certificates, contractor licences and insurance certificates.
The shortcut that recurs
The specific pattern worth naming: a safety device nuisance-trips, someone bypasses it to keep service running, and the bypass becomes permanent because nobody documented it.
High-limit controls on fryers. Interlocks on equipment. Gas shut-offs tied to the hood system. Each exists because of an incident that happened to somebody else.
Any bypassed safety device is an out-of-service condition, and treating it that way requires management support for the manager who has to make that call during a busy service.
The panel and plant room check
A quarterly walk that requires no expertise and catches a real class of problem.
Electrical panels clear — nothing stored in front, minimum clearance maintained.
Panel covers on and secured.
Nothing hot to the touch, no discolouration around breakers, no burning smell.
No extension leads or adaptors serving fixed equipment.
No damaged leads or plugs.
Gas shut-off valves accessible and their location known to staff.
Flexible connectors not stretched, kinked or chafing, restraints attached.
Nothing stored against gas equipment or blocking ventilation openings.
Plant room not used as storage, which is universal and which blocks access, creates fire load and prevents maintenance.
Photograph anything found and raise it. These are cheap fixes with disproportionate consequences, and the plant room is the area nobody visits between failures.
